Made of fava beans with cumin, paprika, olive and salt, the bessara is a very thick soup (bordering on dip) and paired with the local khoobz, or the Moroccan-style pita bread baked in a wood-fire oven until it’s crusty on the outside yet fluffy and light on the inside.
